Ingredients:
1/2 package fettuccine noodles
3 tbsp. butter
1/2 yellow onion (white would be fine, too)
2/3 cup milk (we used 2%)
1/4 cup water
6oz.Neufchâtel cheese (cream cheese would be fine; this is just what we had on-hand)
1/4 red pepper, diced
1/4 green pepper, diced
1/2 cup broccoli
1/2 cup carrots (cut any way you prefer)
1/4 cup fresh basil, chopped
1/2 tsp. Italian seasoning
1/4 tsp. cayenne pepper (optional)
salt & pepper to taste (we used Sea Salt & freshly ground black pepper)
3/4 cup sharp cheddar cheese
1/4 - 1/2 cup Beecher's Flagship Cheese (found at Costco or Pike Place Market)
Directions:
- Bring approx. 6 cups water to a boil in a pot large enough to cook pasta. Be sure to salt the water; this is your only opportunity to add flavor to your noodles!
- Chop up all vegetables and basil. Melt butter in skillet over medium heat, add yellow onion and sauté until just tender.
- Add noodles to boiling water, and bring to a rolling boil. Drain (do not rinse) and set aside.
- Add milk, water and Neufchâtel cheese to the skillet. Simmer until just hot over medium heat.
- Add red pepper, green pepper, broccoli, carrots and basil to the skillet. Cook until vegetables are al dente (you can turn up the heat a little bit for this step, depending on your range).
- Add Italian seasoning, cayenne pepper, salt & pepper to the skillet.
- Add cheese to the skillet. Simmer just until the cheese melts over medium heat.
- You can either toss the noodles with the cheese sauce, or serve the noodles with the cheese sauce poured on top. Enjoy!
